Ingredients

  • 300 g bread day-old
  • 295 ml milk
  • 1 egg
  • 75 g soft butter
  • 165 g sultanas
  • 50 g brown sugar
  • 9 g nutmeg
  • 9 g ground cinnamon
  • 10 g mixed spice
  • 1 tbs sugar *to dress

Method

  • Step 1
    Preheat oven to 190C.
  • Step 2
    In a large bowl, combine bread and milk and let soak for 5 minutes.
  • Step 3
    Stir in egg, butter, sultanas, brown sugar, nutmeg, cinnamon and mixed spice. Mix well.

  • Step 4
    Press into a 23 cm square cake tin which has been greased.
  • Step 5
    Sprinkle with extra sugar to taste.
  • Step 6
    Bake for 35 minutes.
  • Step 7
    Leave in pan to cool.
  • Step 8
    Serve with custard, cream or ice-cream.
