A quick breakfast that even the kids can help prepare. Based on a Jamie Oliver recipe.
Ingredients
- 4 egg
- 1 pinch mixed spice optional
- 4 crumpet
Method

Step 1Lightly whisk eggs together with selected spices.

Step 2Place crumpets into mixture and press lightly. Turn crumpets so each side gets 2 thick coatings of egg mixture.

Step 3Each crumpet should soak up the equivalent of 1 egg.

Step 4Lightly fry.
Recipe Notes
Serve with bacon and tomato, BBQ, brown or Worcestershire sauce. Some people also use maple syrup. I use ground szechuan pepper and chilli spices for a bit of heat to the mix. Alternative: Instead of seasoning egg, spread Vegemite over the crumpet before placing in the whisked egg.
