It is both a fish and egg roll. Very delicious.
Ingredients
- 470 g canned salmon
- 6 egg hard-boiled shelled
- 500 g potato boiled mashed
- 1/2 tsp salt and pepper *to taste
- 1 lemon grated
- 1 tbs parsley finely chopped
- 1/2 cup plain flour
- 1 egg beaten
- 1/4 tsp water
- 1 cup dried breadcrumbs to coat
- 1 cup oil
- 1 tsp lemon cut into wedges *to decorate
- 1 parsley *to decorate
Method

Step 1Drain salmon and remove bones, mash or flake finely.

Step 2Combine salmon, potatoes, salt and pepper, lemon rind and parsley. Mix well.

Step 3Roll hard-boiled eggs in seasoned flour.

Step 4Wrap eggs in salmon mixture.

Step 5Pat patties firmly into shape and coat with flour.

Step 6Dip into beaten egg mixture, then roll into the breadcrumbs.

Step 7Heat oil and deep fry until golden.

Step 8Drain on kitchen paper.
Equipment
- 1 deep fryer
Recipe Notes
Serve hot with thinly sliced potato chips, lemon wedges and parsley sprigs. You could also add you own choice of herbs and spices. Use seasoned flour.
