This simple recipe for egg-in-the-hole is a twist on the traditional recipe for toad-in-the-hole.
Ingredients
- 120g vegetable oil or lard
- 150g (1 cup) plain flour
- 9 eggs
- 250ml milk
Method

Step 1Preheat oven to 200°C fan forced. Divide the oil between 6 x 1 cup capacity Texas muffin pan and place in a hot oven.

Step 2Meanwhile, place flour and 3 eggs in a bowl and whisk to combine, gradually adding the milk. Whisk until the mixture is thick and smooth. Season with sea salt and pepper to taste.

Step 3Divide batter between the 6 cups. Return to the oven and bake for 20-25 minutes, adding a cracked egg into the centre of each after 15 minutes, until the puddings are puffed and golden.

Step 4Serve hot.
