Ingredients

  • 4 tbs sugar
  • 2 cup buttermilk
  • 1 tbs butter melted
  • 2 cup self-raising flour
  • 1 tsp bicarbonate of soda

Method

  • Step 1
    Beat together sugar, 1 cup buttermilk and melted butter until fluffy.
  • Step 2
    Gently fold in sifted flour, bicarbonate of soda and remaining buttermilk (if needed) to form a smooth batter.

  • Step 3
    Heat pan, lightly grease with butter and pour in a spoonful of batter. Turn when bubbles appear and cook the other side.

I have adapted this recipe from an old family favourite because we have a granddaughter who is allergic to peanuts and eggs.
