These pikelets freeze well and my grandchildren love them.
Ingredients
- 4 tbs sugar
- 2 cup buttermilk
- 1 tbs butter melted
- 2 cup self-raising flour
- 1 tsp bicarbonate of soda
Method

Step 1Beat together sugar, 1 cup buttermilk and melted butter until fluffy.

Step 2Gently fold in sifted flour, bicarbonate of soda and remaining buttermilk (if needed) to form a smooth batter.

Step 3Heat pan, lightly grease with butter and pour in a spoonful of batter. Turn when bubbles appear and cook the other side.

I have adapted this recipe from an old family favourite because we have a granddaughter who is allergic to peanuts and eggs.
