No electric or hand-held beaters required! Just a bowl and a whisk. This moist one-bowl wonder is an absolute cinch to make. I used Packham pears for this recipe, but you can use Beurre Bosc or Corella pears. Instead of pear, you could also use Granny Smith or Pink Lady apples.
Ingredients
- 300g self-raising flour
- 315g caster sugar
- ½ tsp salt
- 2 eggs
- 185ml vegetable oil
- 185ml buttermilk
- 2 tsp vanilla extract
- 2 pears, cored, cut into thin wedges
- Cinnamon sugar, to sprinkle
Method

Step 1Preheat oven to 180C/160C fan forced. Grease and line a 22cm round cake pan with baking paper.

Step 2Whisk flour, caster sugar and salt in a large bowl. Make a well in the centre. Add eggs, oil, buttermilk and vanilla and whisk until just combined.

Step 3Pour into prepared pan and level top. Top with pear slices, slightly overlapping. Bake for 1 hour 5 minutes or until a skewer inserted into the centre comes out clean.

Step 4Cool cake completely in pan. Transfer cake to a serving plate. Sprinkle with cinnamon sugar and serve.
