Very simple soup - quick and easy.
Ingredients
- 1 onion finely chopped small
- 1 garlic clove finely chopped
- 1 tbs butter
- 400 g frozen peas
- 1 tsp fresh ginger grated
- 600 ml chicken stock (liquid)
- 100 ml cream
Method

Step 1Heat butter in a saucepan, fry onion and garlic until soft.

Step 2Add peas and ginger.

Step 3Add chicken stock and stir to combine, bring to the boil.

Step 4Simmer for 6-8 minutes, then stir in cream.

Step 5Blend with a stick blender and season to taste with salt and pepper.

Step 6Serve with a swirl of cream or yoghurt.
