Ingredients

  • 2 cups self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1/2 cup caster sugar
  • 125 g butter chilled cubed
  • 1/2 cup honey warmed
  • 1 cup raw sugar

Method

  • Step 1
    Preheat oven to 190C.
  • Step 2
    Place first 6 ingredients into a food processor and process until mixed.

    Add butter and process until mixture looks like breadcrumbs.
  • Step 4
    Pour in honey while processor is on and mix until a dough forms.
  • Step 5
    Roll mixture into small balls and roll in raw sugar.
  • Step 6
    Place on lined baking trays and bake for 10 minutes.
  • Step 7
    Stand on trays for 10 minutes before transferring to a wire rack to cool.
