A delicious healthy gluten, sugar and dairy free cake. Almost guilt free.
Ingredients
- 2 cup almond meal
- 1/2 cup walnuts crushed
- 2 banana mashed
- 1/2 cup extra virgin olive oil
- 1/2 cup rice milk
- 2 extra-large egg lightly beaten
- 1 tsp bicarbonate of soda
- 1 pinch salt
Method

Step 1Preheat oven to 175C.

Step 2Mix all ingredients in a mixing bowl until well combined.

Step 3Pour into a 20 cm square cake tin lined with baking paper.

Step 4Bake for 40 minutes.

- 1 20cm square loose base cake pan
Recipe Notes
This cake is delicious on its own or you can lightly sprinkle with icing sugar or cinnamon sugar. Lovely and moist for days.
