Ingredients

  • 3 tbsp olive oil
  • 500g baby potatoes, thickly sliced
  • 4 chicken marylands, trimmed
  • 1 head garlic, cut in half horizontally
  • 1 medium lemons, cut into 4-5 thick slices
  • 1 tsp dried oregano
  • 1 tbsp rosemary leaves
  • 1 tbsp sea salt
  • 125ml chicken stock
  • 200g feta, crumbled

Method

  • Step 1
    Preheat oven to 200C/180C fan forced.
  • Step 2
    Drizzle 1 tbls of oil over a large roasting pan. Arrange potato slices, chicken marylands, garlic and lemon slices in the pan. Drizzle over remaining oil and scatter with oregano, rosemary and sea salt. Add chicken stock and cover with foil.
  • Step 3
    Bake for 45 - minutes or until the chicken is tender. Remove the foil, scatter with feta and return to the oven to cook for 10 minutes or until the chicken is golden and pulling away from the bone.
  • Step 4
    Serve with seasonal vege or a Greek salad if desired.
