This easy Caramilk cheesecake log makes a big impression on any party table. The creamy and crumbly texture creates a mouthwatering texture that is perfect served after a festive meal.
Ingredients
- 250g packet butternut snap biscuits or something similar
- 1/4 cup butterscotch schnapps
- Caramel sauce, to drizzle
- Caramilk chocolate curls, to decorate
Caramilk cream
- 90g Caramilk chocolate, broken into pieces
- 250g block cream cheese, softened
- 300ml thickened cream
Method

Step 1Microwave Caramilk in a heat proof bowl on high, stirring after each minute until melted. Leave to cool.

Step 2Beat cream cheese. Add the cooled Caramilk and beat until combined.

Step 3Whip the cream to soft peaks and gently fold into the cream cheese mixture. Spoon two-thirds into a large piping or zip lock bag and snip the end about 1cm wide. Cover the remaining mix with cling wrap and refrigerate until required.

Step 4Lay biscuits flat on a tray and brush each with a little liqueur or milk, flip and brush the other side. Pipe around 1 tablespoon of cream onto each biscuit and stack 3-4 biscuits on top of each other.

Step 5To assemble, pipe a line of cream 25-30 cm long on a serving platter. Place each stack of biscuits on the piped line of cream on the serving platter so they are now standing vertically. Join them to create a log 25-30cm long. Pipe over cream and spread to completely encase the biscuits. Cover with plastic wrap and refrigerate for 4 hours or preferably overnight.

Step 6To serve, spread reserved cream over the log. Drizzle with caramel sauce and decorate with Caramilk curls.
Recipe Notes
For an alcohol-free version, substitute the schnapps with 1/4 cup milk.
