A melt-in-your-mouth cheesecake that's guaranteed to impress.
Ingredients
- 125 g chocolate biscuits crushed
- 60 g butter melted
- 250 g cream cheese
- 1/2 cup sugar
- 1 tsp vanilla essence
- 2 eggs separated
- 1 cup cream
- 125 g dark chocolate
- 1 pinch salt
Method

Step 1Combine crushed biscuit crumbs and melted butter, mix well.

Step 2Press mixture on to base of a greased 20 cm springform pan. Refrigerate until required.

Step 3Beat cream cheese until smooth, add ¼ cup sugar and the vanilla, beat well.

Step 4Add lightly beaten egg yolks and chocolate, which has been melted over hot water.

Step 5Beat egg whites and salt until peaks form, gradually beat in remaining sugar. Fold through chocolate mixture.

Step 6Fold through the whipped cream.

Step 7Pour mixture onto crumb base. Refrigerate for 3 hours until set.

Step 8To serve, decorate with extra whipped cream and grated chocolates and / or strawberries.
Recipe Notes
I like to decorate with chocolate leaves, which I make by painting melted chocolate onto the back of washed and thoroughly dried camellia leaves (these have the best shape and definition).
Leave to set in fridge for a few hours before gently peeling the leaf away from the chocolate.
