Delicious with maple syrup and whipped cream.
Ingredients
- 1 1/4 cups plain flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder heaped
- 1/4 cup sugar
- 1/4 cup sunflower oil
- 1 egg
- 400 ml buttermilk
- 1 pinch salt
Method

Step 1Sift flour, bicarbonate of soda and baking powder into a mixing bowl.

Step 2Add sugar, egg, oil, buttermilk and a pinch of salt.

Step 3Blend together with a hand mixer until smooth.

Step 4Melt some butter or margarine in a frying pan over medium heat.

Step 5When pan is hot, pour batter into pan to form a circle about 10-15 cm in diameter.

Step 6Pancake is ready to flip when bubbles form and pop on the upper surface. Underside should be golden-brown in colour.

Step 7Flip and cook the other side until brown.
Recipe Notes
If the batter is too thick, you can add a small amount of milk (full fat or skim milk, not buttermilk).
