Ingredients

  • 2 cups self-raising flour
  • 2 eggs lightly beaten
  • 1 1/2 cups milk
  • 1/3 cup caster sugar
  • 2 tbs ricotta

Method

  • Step 1
    Sift flour into a large mixing bowl.

  • Step 2
    Quickly mix in remaining ingredients until well combined.
  • Step 3
    Pour ⅓ cup of batter at a time into a heated, greased frying pan, and turn when the surface bubbles.
Recipe Notes

This recipe uses ricotta cheese instead of melted butter to reduce the calories.

I find combining the flour quickly with the other ingredients helps the pancakes to turn out light and fluffy.
