Light and fluffy pancakes.
Ingredients
- 2 cups self-raising flour
- 2 eggs lightly beaten
- 1 1/2 cups milk
- 1/3 cup caster sugar
- 2 tbs ricotta
Method

Step 1Sift flour into a large mixing bowl.

Step 2Quickly mix in remaining ingredients until well combined.

Step 3Pour ⅓ cup of batter at a time into a heated, greased frying pan, and turn when the surface bubbles.
Recipe Notes
This recipe uses ricotta cheese instead of melted butter to reduce the calories.
I find combining the flour quickly with the other ingredients helps the pancakes to turn out light and fluffy.
