How to make easy barramundi with lemon: key tips
Wrapping the fillets in parcels to cook is an easy way to keep the flesh of the fish intact, as well as lovely and moist. If you’re not careful, fillets can easily dry out and fall apart when fried in a pan. But, in this method, there is no tricky turning fillets over to cook each side and risking their demise and, because the fillets are steamed in their own juices and lemon juice, they are nice and juicy every time.
You can place the fillets directly on greased foil, but you could just as easily wrap the fish in baking paper-lined foil, which looks better when presenting the fillets on the dinner plates, and also ensures the fish doesn’t stick to the foil.

Barramundi is a mild-tasting fish with a beautiful firm flesh that won’t fall apart easily when baked. It works very well for this dish, but you could also use any other firm white fish.
Lemon is a classic flavour match for fish, but in this recipe it also provides more liquid for steaming the fish. Try adding coarsely chopped coriander leaves, chopped green shallot and thinly sliced long red chilli to the parcels for extra flavour and colour.

Ingredients
- 4 barramundi fillets
- 1 tbs olive oil
- 1 lemon large thinly sliced
- 1 tsp seasoning *to taste
Method

Step 1Preheat oven to 200°C.

Step 2Lay out 4 sheets of aluminium foil and brush each lightly with olive oil.

Step 3Place a fillet of fish on each foil sheet and sprinkle each with salt and pepper.

Step 4Lay 3-4 slices of lemon over each fillet.

Step 5Wrap securely, making sure that each parcel is completely sealed, then wrap each in a second layer of foil.

Step 6Place on a tray and bake for 25 minutes, turning midway through.

Step 7Serve with chips, green salad and extra lemon.

Can I use a different fish for this recipe?
Any firm white fish fillet can be used in place of the barramundi, but the cooking time may have to be adjusted, depending on the size. You could use ling, blue-eye trevalla, swordfish, emperor and Mahi Mahi.
What can I serve with this easy barramundi with lemon?
A fish done this way goes well served with many different sides. This recipe has you serving the fish with a classic chips and salad side, but you could also serve it with Asian greens and steamed rice, a potato salad and coleslaw, or just thick-cut chips or potato wedges and more lemon for squeezing over.
