Easy banana and yoghurt muffins

The easiest muffins that you can whip up in minutes and have yourself some delicious lunchbox treats. Perfect for a morning tea too. - Kelsie Heemskerk

Ingredients

  • 1 cup self raising flour
  • 1 cup vanilla yoghurt
  • 2 eggs
  • 2 mashed bananas
  • Shredded coconut, for sprinkling

Method

  • Step 1
    Preheat oven to 180 degrees.
  • Step 2
    Line 12 muffin cases with a little oil/cooking spray or butter.
  • Step 3
    Mix all ingredients together apart from coconut.
  • Step 4
    Pour mixture evenly into the muffin cases and sprinkle with coconut.
  • Step 5
    Place in oven and cook for 20 minutes, or until tops are golden.
  • Step 6
    Remove and let cool before eating.
Recipe Notes

Note: If you don't have muffin cases you can oil a muffin tray. (I normally use silicon mould trays, and I would still grease these up for this recipe).
