A very nice veal croquette you can have as a main meal, or you can also eat at parties.
Ingredients
- 200 g veal steak, cubed
- 250ml beef stock (liquid)
- 1 bay leaf
- 0.125 tsp nutmeg
- 0.125 tsp thyme
- 4 peppercorns
- 1/4 onion whole
- 1 carrot whole
- 2 sprigs parsley
- 25 g butter
- 4 g gelatine powder dissolved
- 1 tsp lemon juice
- 1 tsp soy sauce *to taste
- 130 g dried breadcrumbs
- 1 egg
- 1/2 cup oil
- 50 g butter
- 25 g plain flour
Method

Step 1Place butter in a large saucepan and brown. Add meat and brown slightly.

Step 2Add stock, bayleaf, nutmeg, thyme, peppercorns, onion, carrot and parsley. Bring to the boil, reduce heat and simmer until meat is well-cooked.

Step 3Remove meat and strain stock. Chop meat finely.

Step 4Place butter and flour in saucepan and stir until thickened. Add stock, stirring continuously, until thickened.

Step 5Reduce heat and cook for 10 minutes.

Step 6Remove from stove, add chopped meat and gelatine, then add the lemon juice, pepper and salt and the Maggi or soy sauce.

Step 7Place on a flat plate, cover, and refrigerate overnight.

Step 8Form mixture into sausage-shape rolls. Roll in breadcrumbs, then egg mixture and then the breadcrumb again.

Step 9Place in fridge or freezer until needed.

Step 10Heat deep fryer or oil in a saucepan.

Step 11Cook a few croquettes at a time until golden.

Recipe Notes
We have these with Dijon mustard, chips and salad. Use veal or beef. Maggi or soy sauce.
