Ingredients

  • 60 g butter
  • 2 chicken breasts diced
  • 1 onion chopped
  • 125 g mushrooms diced
  • 1/2 cup celery diced
  • 1 carrot diced
  • 1/4 cup plain flour
  • 1 1/2 cups chicken stock (liquid)
  • 1/2 cup cream diced
  • 1 pinch pepper
  • 1 sheet puff pastry
  • 1 egg beaten

Method

  • Step 1
    Heat the butter in a pan and cook the diced chicken and onion until soft.
  • Step 2
    Add mushrooms and celery and cook, stirring, for 3 minutes.
  • Step 3
    Sprinkle flour over vegetables and chicken, and stir.
  • Step 4
    Slowly add the chicken stock and stir until sauce boils and thickens.
  • Step 5
    Mix in cream and season with pepper.
  • Step 6
    Spoon mixture into a greased, deep casserole dish, or single serve ramekins.
  • Step 7
    Cut a circle of pastry and place over the filling.
  • Step 8
    Brush pastry with beaten egg and bake at 200C for 20 minutes or until puffed and brown.

Equipment

  • 1 ovenproof ramekins
Recipe Notes

I mostly use single serve ramekins as it serves better on the plate, but if using a large casserole dish, this would go lovely with mashed sweet potato and vegetables.
