Ingredients

  • 120 g medjool dates
  • 1 egg lightly beaten
  • 1 tsp vanilla essence
  • 80 g butter
  • 50 g wholemeal plain flour
  • 50 g plain flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 100 g quick oats
  • 1 tbs milk
  • 1/2 cup sultanas

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Finely chop date flesh, preferrably using a food processor until almost smooth. Combine dates to a large bowl with egg, vanilla and softened butter and mix well with a wooden spoon.
  • Step 3
    Add sifted flours and baking powder, salt, oats and sultanas to bowl and mix well. Stir in milk.
  • Step 4
    Either using moistened hands or a couple of teaspoons, shape into walnut sized balls, place on baking tray lined with paper and flatten slightly with the back of a fork.
  • Step 5
    Bake for 10-15 minutes until just brown around the edges. Cool on a wire rack.

Makes 24 biscuits.
