Ingredients

  • 4 eggs
  • 2 tsp cornflour
  • 2 tbsp water
  • 2 tbsp vegetable oil
  • Toasted bread, to serve

Method

  • Step 1
    Crack eggs into a bowl.
  • Step 2
    In a separate bowl, mix cornflour and water.
  • Step 3
    Whisk cornflour mixture into the eggs.
  • Step 4
    Heat a 26cm frying pan over a medium heat. Pour in 1 tbsp of oil and when hot pour in half the egg mixture. Leave to cook for 30 seconds. Working quickly, take a rubber spatula and pull the eggs to one side, then pull one edge to the centre and continue to work around the edges to create a circle. Leave to cook for a further 30 seconds. Remove from heat.
  • Step 5
    Repeat with remaining oil and egg mixture.
  • Step 6
    Serve on toasted bread.
