Ingredients
- 4 eggs
- 2 tsp cornflour
- 2 tbsp water
- 2 tbsp vegetable oil
- Toasted bread, to serve

Step 1Crack eggs into a bowl.

Step 2In a separate bowl, mix cornflour and water.

Step 3Whisk cornflour mixture into the eggs.

Step 4Heat a 26cm frying pan over a medium heat. Pour in 1 tbsp of oil and when hot pour in half the egg mixture. Leave to cook for 30 seconds. Working quickly, take a rubber spatula and pull the eggs to one side, then pull one edge to the centre and continue to work around the edges to create a circle. Leave to cook for a further 30 seconds. Remove from heat.

Step 5Repeat with remaining oil and egg mixture.

Step 6Serve on toasted bread.
