A very light and fluffy cake that melts in your mouth.

Ingredients

  • 4 eggs room temperature separated
  • 3/4 cup Woolworths Essentials Caster Sugar
  • 1 pinch salt
  • 3/4 cup cornflour
  • 1 tbs custard powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cream of tartar

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Grease 2 x 20 cm tins or a larger baking tin.

  • Step 3
    Beat egg whites and salt together until firm.
  • Step 4
    Gradually add the caster sugar. Beat well until sugar has dissolved.
  • Step 5
    Add beaten egg yolks, and beat for 2 minutes.
  • Step 6
    Fold in sifted dry ingredients and pour into baking tins.
  • Step 7
    Reduce oven temperature to 190C and bake for 20-25 minutes on the centre shelf.
  • Step 8
    Dredge cooled cake with icing sugar or cover with whipped cream and crumbled Flake.
Recipe Notes

I usually make this in one large baking tin instead of the two small ones.
