A very light and fluffy cake that melts in your mouth.
Ingredients
- 4 eggs room temperature separated
- 3/4 cup Woolworths Essentials Caster Sugar
- 1 pinch salt
- 3/4 cup cornflour
- 1 tbs custard powder
- 1/2 tsp bicarbonate of soda
- 1 tsp cream of tartar
Method

Step 1Preheat oven to 200C.

Step 2Grease 2 x 20 cm tins or a larger baking tin.

Step 3Beat egg whites and salt together until firm.

Step 4Gradually add the caster sugar. Beat well until sugar has dissolved.

Step 5Add beaten egg yolks, and beat for 2 minutes.

Step 6Fold in sifted dry ingredients and pour into baking tins.

Step 7Reduce oven temperature to 190C and bake for 20-25 minutes on the centre shelf.

Step 8Dredge cooled cake with icing sugar or cover with whipped cream and crumbled Flake.
Recipe Notes
I usually make this in one large baking tin instead of the two small ones.
