Ingredients

  • 440 g canned tuna
  • 1 cup rice
  • 30 g butter
  • 1 egg beaten
  • 3/4 cup cheese grated

Sauce

  • 1 tbs butter
  • 1 1/2 cup milk
  • 2 tbs plain flour
  • 1 tbs curry powder
  • 1/2 cup mayonnaise
  • 2 tsp lemon juice
  • 2 tbs parsley chopped
  • 1 egg beaten

Method

  • Step 1
    Cook rice in boiling water until soft and drain.

  • Step 2
    Combine rice with butter, egg, salt and pepper.
  • Step 3
    Press rice mixture into the base of a greased rectangular casserole dish.
  • Step 4
    Arrange flaked tuna over rice.
  • Step 5
    Make a white sauce with the extra butter, flour and milk.
  • Step 6
    Add mayonnaise and curry powder, and stir until smooth.
  • Step 7
    Add lemon juice, parsley and beaten egg and simmer for 1 minute.
  • Step 8
    Spoon sauce over tuna and sprinkle grated cheese over the top.
  • Step 9
    Bake in a moderate oven for 25 minutes.

Equipment

  • 1 casserole dish
Recipe Notes

Tinned salmon can be used instead of tuna. Add more curry if desired as this is very mild.
