A creamy tuna sauce on a delicious rice base.
Ingredients
- 440 g canned tuna
- 1 cup rice
- 30 g butter
- 1 egg beaten
- 3/4 cup cheese grated
Sauce
- 1 tbs butter
- 1 1/2 cup milk
- 2 tbs plain flour
- 1 tbs curry powder
- 1/2 cup mayonnaise
- 2 tsp lemon juice
- 2 tbs parsley chopped
- 1 egg beaten
Method

Step 1Cook rice in boiling water until soft and drain.

Step 2Combine rice with butter, egg, salt and pepper.

Step 3Press rice mixture into the base of a greased rectangular casserole dish.

Step 4Arrange flaked tuna over rice.

Step 5Make a white sauce with the extra butter, flour and milk.

Step 6Add mayonnaise and curry powder, and stir until smooth.

Step 7Add lemon juice, parsley and beaten egg and simmer for 1 minute.

Step 8Spoon sauce over tuna and sprinkle grated cheese over the top.

Step 9Bake in a moderate oven for 25 minutes.

Recipe Notes
Tinned salmon can be used instead of tuna. Add more curry if desired as this is very mild.
