Ingredients

  • 4 chop pork loin
  • 4 egg
  • 1 tsp dijon mustard
  • 1/2 cup dried breadcrumbs
  • 1/4 cup parmesan cheese
  • 1/2 tsp oregano
  • 1/4 tsp lemon rind zested

Method

  • Step 1
    Cover chops with glad wrap and beat with mallet until thin.
  • Step 2
    Mix mustard and egg together.
  • Step 3
    Combine remaining ingredients and place in shallow dish.
  • Step 4
    Dip pork chops into egg mixture.
  • Step 5
    Roll in breadcrumb mix and refrigerate for half an hour.
  • Step 6
    Fry in hot olive oil until golden brown.
Recipe Notes

Delicious served with a simple spinach salad and a wedge of lemon.
