Its crunchy, full of flavour and the use of Glad Wrap minimises clean up time!
Ingredients
- 4 chop pork loin
- 1 tsp Dijon mustard
- 1/2 cup dried breadcrumbs
- 2 eggs
- 1/4 cup parmesan cheese
- 1/2 tsp oregano
- 1/4 tsp lemon rind zested
Method

Step 1Cover chops with Glad Wrap and beat with mallet until thin.

Step 2Mix mustard and egg together.

Step 3Combine remaining ingredients and place in a shallow dish.

Step 4Remove Glad Wrap, then dip pork chops into egg mixture.

Step 5Roll in breadcrumb mix and refrigerate for half an hour.

Step 6Fry in hot olive oil until golden brown.

Delicious served with a simple spinach salad and a wedge of lemon.
