Ingredients

  • 500g chicken tenderloins cut into strips
  • 1 cup Kellogg's cornflake crumbs
  • 1/2 cup parmesan cheese
  • 2 eggs
  • 1 cup plain flour
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Place flour on a plate.
  • Step 3
    Beat eggs in a bowl.
  • Step 4
    In a separate bowl, combine cornflake crumbs and Parmesan cheese.
  • Step 5
    Coat chicken in flour. Shake off excess.
  • Step 6
    Place chicken into egg mixture to coat.
  • Step 7
    Roll chicken thoroughly in crumb mixture.
  • Step 8
    Place on a lightly greased baking tray.
  • Step 9
    Bake for approximately 15 minutes or until chicken is cooked, turning half way through the cooking time.
Recipe Notes

You can use chicken breast.

If you prefer a sauce with this chicken recipe, I've used a simple butter, brandy, garlic and cream sauce to drizzle over.
