This is the best fish dish I have ever cooked!
Ingredients
- 1 tbs oil
- 1 leek sliced
- 2 garlic cloves crushed
- 1/3 cup plain flour
- 1 1/2 cups fish stock
- 125 g light cream cheese softened
- 800 g white fish fillet cut into strips firm
- 1 tbs fresh lemon juice *to taste
- 1 handful tarragon small *to taste
- 9 filo pastry sheets
- 1 olive oil spray
Method

Step 1Preheat oven to 200C.

Step 2Heat oil in large frying pan. Add leek and garlic.

Step 3Saute for 1-2 minutes until softened.

Step 4Stir through flour and cook for 1-2 minutes.

Step 5Combine stock and cream cheese and add to leek mixture, stirring until well combined.

Step 6Bring to boil, reduce head and simmer for 5 minutes or until thick.

Step 7Add fish, lemon and seasonings then remove from heat.

Step 8Pour into a lightly greased 8 cup baking dish.

Step 9Make a stack with 3 sheets of filo spraying oil between each sheet.

Step 10Cut into 8 squares and scrunch up. Place on top of fish mixture.

Step 11Repeat until fish mixture is covered.

Step 12Spray top with oil spray and bake in oven for 20 minutes or until filo is golden.

Step 13Serve with tossed salad.
Recipe Notes
Blue grenadier, or any firm white fish fillet can be used.
