Ingredients

  • 500 g shells pasta shapes
  • 1/3 cup whole-egg mayonnaise
  • 1/3 cup sour cream
  • 2 tbs lemon juice
  • 1 tbs wholegrain mustard
  • 150 g deboned ham leg chopped
  • 1/4 cup fresh flat-leaf parsley
  • 1/2 tsp salt and pepper *to taste

Method

  • Step 1
    Cook pasta in a large saucepan of salted water until tender, drain.
  • Step 2
    Refresh under cold water, drain again.
  • Step 3
    Combine mayonnaise, sour cream, lemon juice and mustard in a bowl.
  • Step 4
    Stir until smooth and creamy.
  • Step 5
    Add pasta and gently coat with the sauce.
  • Step 6
    Stir though ham and parsley.
  • Step 7
    Season to taste with salt and pepper.
  • Step 8
    Refrigerate in an airtight bowl or container.

Recipe Notes
Substitute ham with smoked salmon, cooked bacon or pancetta or any cold meat of your choice. Flavours develop nicely in the fridge.
