Creamy pasta salad. Delicious at any family BBQ.
Ingredients
- 500 g shells pasta shapes
- 1/3 cup whole-egg mayonnaise
- 1/3 cup sour cream
- 2 tbs lemon juice
- 1 tbs wholegrain mustard
- 150 g deboned ham leg chopped
- 1/4 cup fresh flat-leaf parsley
- 1/2 tsp salt and pepper *to taste
Method

Step 1Cook pasta in a large saucepan of salted water until tender, drain.

Step 2Refresh under cold water, drain again.

Step 3Combine mayonnaise, sour cream, lemon juice and mustard in a bowl.

Step 4Stir until smooth and creamy.

Step 5Add pasta and gently coat with the sauce.

Step 6Stir though ham and parsley.

Step 7Season to taste with salt and pepper.

Step 8Refrigerate in an airtight bowl or container.

Recipe Notes
Substitute ham with smoked salmon, cooked bacon or pancetta or any cold meat of your choice. Flavours develop nicely in the fridge.
