These pancakes don't actually have the cross, but they taste just like hot cross buns! Easy and great for breakfast.
Ingredients
- 2 tbs butter melted
- 3/4 cup buttermilk
- 2 tbs marmalade
- 1 egg
- 1 cup plain flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp mixed spice
- 1/2 cup mixed dried fruit
Method

Step 1Combine melted butter, buttermilk, marmalade and egg.

Step 2Fold in dry ingredients and dried fruit to create a batter that's mousse consistency, not too thick or too runny.

Step 3Heat a non-stick pan over medium-low heat, and cook pancakes for approximately 4 minutes per side.

Step 4Serve with butter and banana slices.
Recipe Notes
For buttermilk substitute: mix 1 tablespoon lemon juice or white vinegar into milk.
For mixed fruit, use currants and sultanas and anything else that appeals.
