Light and fluffy with loads of flavour
Ingredients
- 4 potato
- 1 sprinkle salt *to taste
- 1 sprinkle pepper *to taste
- 175 g butter softened
- 1/4 tsp ground nutmeg
- 75 ml thickened cream
- 1 tbs chives chopped
- 3 egg beaten
Method

Step 1Preheat oven to 200C. Bake potatoes on a rack for about 1 1/2 hours until crispy outside and soft in middle.

Step 2Cool potatoes until you are able to handle them, cut the top off each potato and scoop out the potato leaving a shell.

Step 3Mash the scooped out potato with the butter until smooth and add salt, pepper, and nutmeg, mix well. Fold in egg, cream and chives. Spoon mix back into potato shell and cook in oven for around 20 mins until golden. .
Recipe Notes
I normally use baking potatoes like desirees for the best results.
