A delicious slice using sugar-coated lattice biscuits. No baking required.
Ingredients
- 2 x 200g Lattice biscuits
- 125g cream cheese
- 125g butter
- 1/2 cup caster sugar
- 1 tsp vanilla essence
- 2 tsp lemon juice
- 2 tsp gelatine powder
- 1/4 cup hot water cooled
Method

Step 1Dissolve gelatine in hot water and cool.

Step 2Beat together cream cheese, butter and caster sugar until well combined and creamy.

Step 3Add remaining ingredients and beat well.

Step 4Place lattice biscuits in base of a slice tin, sugar side down.

Step 5Refrigerate until firm.

Step 6Spread cream cheese mixture evenly over biscuits and top with more biscuits, sugar side up.

Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
