Ingredients

  • 2 x 200g Lattice biscuits
  • 125g cream cheese
  • 125g butter
  • 1/2 cup caster sugar
  • 1 tsp vanilla essence
  • 2 tsp lemon juice
  • 2 tsp gelatine powder
  • 1/4 cup hot water cooled

Method

  • Step 1
    Dissolve gelatine in hot water and cool.

  • Step 2
    Beat together cream cheese, butter and caster sugar until well combined and creamy.
  • Step 3
    Add remaining ingredients and beat well.
  • Step 4
    Place lattice biscuits in base of a slice tin, sugar side down.
  • Step 5
    Refrigerate until firm.
  • Step 6
    Spread cream cheese mixture evenly over biscuits and top with more biscuits, sugar side up.

Recipe Notes

Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
