A very healthy snack containing oats, nuts and only a very small amount of sugar.
Ingredients
Biscuits
- 250 g butter
- 2 tbs golden syrup
- 1/2 cup dates coarsely chopped
- 1 egg
- 1 tsp bicarbonate of soda
- 1 cup self-raising flour
- 2 cup rolled oats
- 1 tbs brown sugar
- 3/4 cup coconut
- 1/2 cup sultanas
- 1/2 cup mixed nuts chopped
Icing
- 60 g unsalted butter softened
- 1 cup icing sugar sifted
- 2 tsp lemon juice
- 2 tsp lemon rind, finely grated
Method

Step 1Preheat oven to 170C (fan forced). 190C for normal oven.

Step 2Line two trays with sheets of foil or non-stick baking paper.

Step 3Melt butter with golden syrup in a small heatproof bowl over barely simmering water, stirring occasionally (do not allow the bowl to touch the water). Remove from heat and allow to cool slightly.

Step 4Chop dates and place in a small heatproof bowl. Cover with boiling water. Set aside.

Step 5Beat egg and bicarb soda together and set aside.

Step 6Drain dates thoroughly.

Step 7Mix cooled butter mixture with egg mixture and beat well with an electric beater.

Step 8Add sifted flour and dry ingredients. Mix until smooth.

Step 9Fold in well-drained dates and nuts.

Step 10Roll mixture tightly into balls and place on prepared trays. Flatten slightly with a fork. Alternatively, to create a slice, press mixture into a shallow tin.

Step 11For biscuits. bake for approximately 12 mins, until brown. For a slice, bake for 20- 30 mins, until golden brown.

Step 12To make the icing, place butter, icing sugar, lemon juice and rind in a bowl and beat for 5 mins until light and creamy. Spread the icing on each biscuit.
