Ingredients

  • 250 g spreadable cream cheese
  • 360 g unsalted butter room temperature
  • 3 cups plain flour
  • 420 g canned apple pieces
  • 1 cup icing sugar
  • 8 g vanilla sugar
  • 1 cup sultanas
  • 36 g ground cinnamon

Method

  • Step 1
    Preheat oven to 175C.
  • Step 2
    Mix cream cheese and butter with electric mixer until light and fluffy. Add flour 1 cup at a time and mix well.
  • Step 3
    Wrap the dough into cooking foil and leave in fridge for at least 1 hour. Remove and transfer onto a sugary working surface. Use a rolling pin to roll dough into a square shape, 1cm thick.
  • Step 4
    Cut dough into smaller squares, approximately 8cm in size. Add canned apples to centre of each square and dust with cinnamon and add few of sultanas.
  • Step 5
    Overlap opposite corners of the dough, brush with eggs mixed with little bit of milk.
  • Step 6
    Bake the cookies for about 30 minutes, or until golden brown. Leave to cool down and then dust them with icing sugar mixed with vanilla sugar.

Recipe Notes

You can freeze some in a plastic container and dust with sugar just before serving.

You can use the canned fruit filling of your choice, I like apples and apricots.
