Put your Kmart pie maker to good use making these delicious zucchini and bacon mini frittatas. They’re perfect for a quick lunch or dinner, and are just as good the next day in lunch boxes. - Greer Worsley

Ingredients

  • 1 tbs olive oil
  • 1/2 brown onion, diced
  • 2 rashers bacon
  • 4 eggs
  • 100ml cream
  • 1/2 cup grated tasty cheese
  • 1 zucchini, grated
  • 50g baby spinach, chopped
  • Pinch of salt and pepper *to season

Method

  • Step 1
    Heat olive oil in a frypan over medium heat. Cook onion and bacon for 3 - 4 minutes. Set aside.

  • Step 2
    Whisk together eggs and cream. Season well with salt and pepper, and stir through cheese, cooked onion and bacon, zucchini and spinach.
  • Step 3
    Preheat pie maker according to manufacturer’s instructions. Fill the plates with 1/3 cup of frittata mixture. Cook for 5 - 8 minutes until egg has set. Repeat with remaining mixture.

Recipe Notes

You can vary the ingredients according to taste. Omit the bacon for a vegetarian version, use feta cheese instead of tasty, or add different vegies such as grated carrots or chopped capsicum.

You can use milk instead of cream.
