Put your Kmart pie maker to good use making these delicious zucchini and bacon mini frittatas. They’re perfect for a quick lunch or dinner, and are just as good the next day in lunch boxes.
Ingredients
- 1 tbs olive oil
- 1/2 brown onion, diced
- 2 rashers bacon
- 4 eggs
- 100ml cream
- 1/2 cup grated tasty cheese
- 1 zucchini, grated
- 50g baby spinach, chopped
- Pinch of salt and pepper *to season
Method

Step 1Heat olive oil in a frypan over medium heat. Cook onion and bacon for 3 - 4 minutes. Set aside.

Step 2Whisk together eggs and cream. Season well with salt and pepper, and stir through cheese, cooked onion and bacon, zucchini and spinach.

Step 3Preheat pie maker according to manufacturer’s instructions. Fill the plates with 1/3 cup of frittata mixture. Cook for 5 - 8 minutes until egg has set. Repeat with remaining mixture.

Recipe Notes
You can vary the ingredients according to taste. Omit the bacon for a vegetarian version, use feta cheese instead of tasty, or add different vegies such as grated carrots or chopped capsicum.
You can use milk instead of cream.
