This is a wonderful combination of flavours - chocolate, cranberries, creamy cheesecake, cinnamon and orange. A great slice for afternoon tea, or warmed with ice cream for dessert.
Ingredients
- 250 g butter softened
- 1 orange grated zested
- 1 cup brown sugar firmly packed
- 2 cups plain flour
- 1 1/2 cups rolled oats
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 375 g dark chocolate chips
- 1 cup dried cranberries
- 250 g cream cheese softened
- 400 g condensed milk
- 1/4 cup orange juice
- 1 tsp vanilla essence
- 1 egg
- 1 tbs plain flour
Method

Step 1Preheat oven to 180C and grease the bottom and sides of a 23 x 33mcm lamington pan and/or line with baking paper.

Step 2In a small bowl mix the flour, oats, salt and cinnamon until blended.

Step 3Toss chocolate chips and cranberries through flour mixture.

Step 4Mix butter, brown sugar and orange zest with an electric mixer until creamy.

Step 5Add flour mixture to bowl and mix on low speed until a crumbly dough is formed. Measure 2 cups of the crumbly dough and set aside.

Step 6Tip the remaining dough into the prepared pan and press to form a thick bottom crust. Place in oven on centre rack and bake for 15 minutes.

Step 7Mix cream cheese with electric mixer on low-medium speed until smooth.

Step 8Slowly add condensed milk, egg, orange juice, vanilla, and remaining 1 tablespoon flour to blend.

Step 9Remove pan from oven and pour cream cheese mixture over hot crust.

Step 10Sprinkle remaining crumb dough evenly over the top, then return to the oven for about 30 minutes, until edges are brown and top looks firm and golden.

Step 11Cool until safe to handle, then refrigerate until firm. To serve cut into squares.
