We've given potato bake an Italian twist with delicious additions of tomatoes, fresh herbs and anchovies. You'll never get bored of this easy and healthy Italian potato bake.
Ingredients
- 1kg white potatoes, peeled, thinly sliced
- 4 tomatoes, thinly sliced
- 1 large brown onion, halved, thinly sliced
- 1/4 cup fresh basil leaves
- 100ml extra virgin olive oil
- 3 garlic cloves, crushed
- 2 anchovy fillets, finely chopped
- 2 tsp chopped fresh thyme leaves, plus extra to serve
Method

Step 1Preheat oven to 200°C/180°C fan-forced.

Step 2Arrange potato, tomato, onion and basil, overlapping, in a 3cm-deep, 23cm x 39cm oval baking dish. Combine oil, garlic, anchovy and thyme in a small bowl. Season with salt and pepper. Drizzle over dish. Cover with greased foil. Place on a baking tray.

Step 3Bake for 1 hour. Uncover. Baste with cooking juices. Bake for 30 minutes or until golden. Serve sprinkled with extra thyme.

Cook’s note:
- Use a mandoline to easily cut potato into super-thin slices.
