These savoury muffins are ideal for the lunch or tea table.
Ingredients
- 125 g butter cubed
- 1 cup frozen corn whole
- 4 tbs ham (deli) chopped
- 2 eggs beaten large
- 1 onion finely chopped small
- 4 cups self-raising flour
- 1 1/2 cups milk
- 1 pinch cayenne pepper
- 1 tsp salt
Method

Step 1Combine flour, salt and cayenne pepper, rub in butter.

Step 2Microwave onion for approximately 3 minutes, add to flour mixture.

Step 3Add remaining ingredients and mix to form a soft dough.

Step 4Spoon into greased muffin tins.

Step 5Bake at 190C for 15-20 minutes.

Step 6Turn onto cake rack to cool.

Step 7Split and spread with butter to serve.

Recipe Notes
Use sweet corn whole.
If you find the mixture to stiff when mixing, mix with some more milk until a soft dough is formed.
