Recipe Notes
Why do Brussels sprouts taste bitter?
People love or hate brussel sprouts. Often the reason people hate them is because they were forced to eat badly prepared brussel sprouts when they were children – usually because they were over boiled.
Brussel sprouts are naturally bitter, but when fried (or baked) it brings out some sweetness to counteract the bitter, which allows their complex flavours to shine.
