With the richness of the fruit cake, sweetened with condensed milk, and dipped in dark chocolate, these little fruit cake balls are a delicious riff on chocolate truffles. - Greer Worsley

Ingredients

  • 800g fruit cake
  • 200g (half tin) condensed milk
  • 290g dark chocolate melts

Method

  • Step 1
    Crumble fruit cake into a large bowl. Add condensed milk and mix to combine. Using clean damp hands, roll into walnut-sized balls and place in a single layer on a tray lined with baking paper.
  • Step 2
    Melt chocolate in short bursts in the microwave, or in a bowl placed over a saucepan of simmering water.
  • Step 3
    Use two forks to dip each fruit cake ball into the chocolate. Allow excess to drizzle off, then place on a tray lined with baking paper. Refrigerate until chocolate has set.

What fruit cake is best to use for these truffles?

You can buy fruit cakes from the bakery section of the supermarket, and any of these will work well in your truffles. I chose a dark fruit cake for a richer result.

Can I use different types of chocolate for these truffles?

Of course! While we think the bittersweetness of dark chocolate works best with fruit cake, milk or even white chocolate will still be delicious.

This recipe is also a great way to use up leftover Christmas cake.
