Serve warm in squares with cream for dessert or cold in fingers for the lunchbox.
Ingredients
- 125g butter
- 100g sugar
- 1 egg
- 1 1/2 cup Woolworths Essentials Self-Raising Flour
- 1 cup raspberry jam
Topping
- 1 cup coconut
- 1/2 cup sugar
- 1 egg
- 1 lemon juiced
Method

Step 1Melt butter in a bowl.

Step 2Add sugar and stir well.

Step 3Add egg and then flour.

Step 4Stir until mixture forms a ball of soft dough.

Step 5Press into a greased 30 cm x 25 cm slice pan.

Step 6Spread liberally with jam.

Step 7Topping: Using the same bowl, mix together coconut, sugar, egg and lemon juice.

Step 8Cover base evenly with topping (jam will be visible).

Step 9Bake at 175C for 20 minutes or until nicely browned.
