This dish is a winner in our family, everyone loves it. It's a tasty winter dish. My husband always has seconds.
Ingredients
- 500 g chicken breast fillet deboned
- 1 tbs soy sauce
- 1 tbs sesame oil
- 1 tbs cornflour
- 1 tbs water
- 1 tbs vegetable oil
- 3 spring onion
- 1 onion finely chopped small
- 1 clove garlic crushed
- 1 tbs vegetable oil
- 1 tsp sambal oelek
- 2 tbs smooth peanut butter
- 1 tbs soy sauce
- 1 tbs fresh lemon juice
- 1/2 cup water
Method

Step 1Remove any fat from chicken and cut into thin slices.

Step 2In separate bowl, mix soy sauce, sesame oil, cornflour and water and mix in chicken pieces.

Step 3Heat oil in large frying pan or wok and cook chicken, stirring for 2-3 minutes until just cooked.

Step 4Place in dish.

Step 5Heat additional oil in same pan and sauté onion and garlic until the onion is clear.

Step 6Add sambal oelek and cook for one minute.

Step 7Add peanut butter, extra soy sauce, lemon juice and additional water.

Step 8Bring to boil.

Step 9Add in chicken to resimmer.

Step 10Serve immediately, garnished with sliced spring onions and rice if desired.

Recipe Notes
I have only used sambal oelek which I believe really adds to this dish. More or less can be added according to taste, perhaps try one half teaspoon initially.
