Ingredients

  • 100 g butter
  • 75 g caster sugar
  • 75 g brown sugar
  • 1 egg
  • 100 g self-raising flour
  • 50 g quick-cook oats
  • 50 g desiccated coconut

Method

  • Step 1
    Cream together butter and the brown and white sugars until the mixture is light and fluffy.
  • Step 2
    Beat in the egg, then fold in the flour.
  • Step 3
    Fold in the oats and coconut.
  • Step 4
    Drop teaspoonfuls of the mixture onto greased biscuit trays and leave approximately 5 cm between biscuits.
  • Step 5
    Bake for approximately 10-15 minutes or until golden. Cool on wire rack.
Recipe Notes
Can be stored in an airtight container for up to 2 weeks. Variations: Chocolate oat biscuits, omit the coconut and add 25 g of cocoa to the flour. Peanut butter biscuits, omit the oats and the coconut and fold in 75 g crunchy peanut butter.
