This delightful pud is a twist on the retro classic, jam roly poly. Made with Green's cinnamon scroll packet mix, this easy recipe has all the hallmarks of a decadent cinnamon scroll and is made even more delicious by adding a puddle of custard!
Ingredients
- 1 x Green's Cinnamon scroll mix* (see note)
- 3 tbsp butter
- Milk, for brushing
- 1 tsp cold water
- 2 tbs custard powder
- 2 tsp sugar
- 2 cups milk
Method
-
Step 1Preheat oven to 180C fan-forced. Line baking tray with foil, leaving enough of the foil to hang over the sides of the baking tray. Grease the foil with butter.
-
Step 2Place scroll mix into a bowl and add milk. Mix with a wooden spoon until it is just combined. Place mix onto a lightly floured surface and knead gently with your hands until smooth. Rest the dough for 5 minutes.
-
Step 3Lightly flour a clean surface and roll out dough until 1cm thick. Spread the dough with butter, right to the edges. Sprinkle with cinnamon sugar.
-
Step 4Beginning with the long edge of the dough, roll until it resembles a Swiss roll. Place onto the foil. Brush top and sides with milk. Bring the edges of the foil together to make a long pouch. Be careful not to close it too tightly as the scroll will expand while it bakes.
-
Step 5Bake for 25 minutes until the scroll is cooked through. It will resemble a cake mixture.
-
Step 6Place contents of the icing mixture sachet into a bowl. Add water one drop at a time until you reach the desired consistency to for drizzling.
-
Step 7To make the custard, add milk to a saucepan. Add custard powder and sugar, Whisk gently until it thickens.
-
Step 8Drizzle the scrolly poly with icing. Cut into thick slices and serve standing in a bowl of warm custard.
