This spicy coconut beef curry is full of flavour.
Ingredients
- 1/4 cup desiccated coconut
- 1 tsp ground coriander
- 1/4 tsp ground turmeric
- 4 kaffir lime leaf shredded
- 1 1/2 kg beef chuck steak
- 1 cup powdered coconut milk
- 2 tbs fish sauce
- 1 pinch salt
Curry Paste
- 2 red chilli deseeded dried roughly chopped
- 4 garlic clove roughly chopped
- 8 shallots roughly chopped
- 1 lemongrass stalk roughly chopped
- 25 g fresh ginger roughly chopped
- 25 g galangal fresh roughly chopped
- 1 pinch salt
Method

Step 1Make the curry paste by placing all ingredients in a food processor and processing into a paste. Add water, if required.

Step 2Lightly toast coconut over low heat until lightly golden. Allow to cool. Process in a food processor to make a fine powder.

Step 3Heat large frying pan. Add curry paste, coriander, turmeric and lime leaves. Cook until fragrant. Add beef and brown.

Step 4Place beef, fish sauce, coconut milk powder and desiccated coconut into slow cooker and stir to combine.

Step 5Cook for 4-5 hours on high. Add water if required.
