Perfect for afternoon teas or desserts. This one is a real winner with adults and children alike - guaranteed not to last long.
Ingredients
- 125g butter chopped softened
- 3/4 cup caster sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 cup plain flour sifted
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 1/2 tbs almond meal
- 1/2 cup milk
- 2 pears chopped cored peeled
Crumble Topping
- 1/2 cup plain flour
- 1 1/2 tbs brown sugar
- 1/4 tsp baking powder
- 60g butter chopped softened
Method

Step 1Preheat oven to 160C.

Step 2Beat butter, sugar and vanilla with electric mixer until pale and creamy.

Step 3Gradually add the eggs and beat well.

Step 4Add the flour, baking powder, cinnamon and almond meal, and beat to combine.

Step 5Fold through the milk and pears.

Step 6To make the topping, combine flour, sugar and baking powder in a bowl.

Step 7Add the butter rub it into the flour mixture with fingertips.

Step 8Line the base of a lightly greased round spring-form cake tin with baking paper.

Step 9Spoon in cake mixture and top with crumble.

Step 10Bake for 1 hour and 10 minutes or until cooked when tested with a skewer.

Step 11Allow to cool in the tin.
