Ingredients

  • 125g butter chopped softened
  • 3/4 cup caster sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup plain flour sifted
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 1/2 tbs almond meal
  • 1/2 cup milk
  • 2 pears chopped cored peeled

Crumble Topping

  • 1/2 cup plain flour
  • 1 1/2 tbs brown sugar
  • 1/4 tsp baking powder
  • 60g butter chopped softened

Method

  • Step 1
    Preheat oven to 160C.
  • Step 2
    Beat butter, sugar and vanilla with electric mixer until pale and creamy.

    Gradually add the eggs and beat well.
  • Step 4
    Add the flour, baking powder, cinnamon and almond meal, and beat to combine.
  • Step 5
    Fold through the milk and pears.
  • Step 6
    To make the topping, combine flour, sugar and baking powder in a bowl.
  • Step 7
    Add the butter rub it into the flour mixture with fingertips.
  • Step 8
    Line the base of a lightly greased round spring-form cake tin with baking paper.
  • Step 9
    Spoon in cake mixture and top with crumble.
  • Step 10
    Bake for 1 hour and 10 minutes or until cooked when tested with a skewer.
  • Step 11
    Allow to cool in the tin.
