Make this delicious chocolate and coffee cake for afternoon tea. The cake is a simple, moist sponge and the icing is a delicious twist, giving it a lovely coffee flavour!

Ingredients

  • 3 tbs butter melted
  • 125ml milk
  • 250ml self-raising flour
  • 2 tbs cocoa
  • 2 eggs
  • 1/2 tsp vanilla essence
  • 250ml caster sugar

Chocolate coffee icing

  • 200g butter, softened
  • 1 1/2 cups icing sugar
  • 1/4 cup cocoa powder
  • 1 tbsp coffee

Method

  • Step 1
    Place all ingredients into a bowl. Beat with electric beater on high for 3 minutes.
  • Step 2
    Pour mixture into a prepared tin and bake at 180 C for 25-30 minutes or until a skewer inserted into the centre comes out clean. Cool completely.
  • Step 3
    To make the icing, beat the butter until pale. Add coffee and beat until well-combined. Add cocoa and icing sugar and beat well. Spread over cake. Serve.
Recipe Notes

Add a little water to the icing if needed.
