Yummy chocolate and raspberry muffins.
Ingredients
- 125 g butter room temperature
- 1 cup caster sugar
- 2 egg room temperature
- 1 1/2 cup self-raising flour
- 1/3 cup cocoa
- 1/2 tsp bicarbonate of soda
- 1 cup milk
- 150 g fresh raspberries
Method

Step 1Preheat oven to 190C or 170C fan forced.

Step 2Combine butter, sugar and eggs in a bowl and mix until light and creamy.

Step 3Sift flour, cocoa, and bi-carbonate soda and add to creamed mixture with milk.

Step 4Beat on medium speed for 1 minute or until mixture is smooth.

Step 5Spoon into greased ⅓ cup muffin pans.

Step 6Top all muffins evenly with raspberries and bake for 20 minutes.

Recipe Notes
I also add choc chips to make them even more yummy for those chocoholics. Frozen raspberries can also be used.
