Ingredients

  • 1 kg pumpkin chopped
  • 500 g bacon rashers pieces
  • 8 cup water
  • 2 1/2 tbs chicken stock powder
  • 1 tbs olive oil
  • 1 pinch salt and pepper

Method

  • Step 1
    Heat oil and fry bacon until browned.
  • Step 2
    Add water, stock, pumpkin, salt and pepper to saucepan.
  • Step 3
    Cook until pumpkin is very soft.
  • Step 4
    Blend using a stab mixer or food processor.
Recipe Notes
Omit the oil if using a non-stick pan. Can be served with a dollop of cream. For a variation it is also very nice cooked with some curry powder to taste. Stock cubes and powders say 1 cube or teaspoon per cup of water but I have found it adds more flavour to add a couple more.
