A lovely, smooth winter warmer.
Ingredients
- 1 kg pumpkin chopped
- 500 g bacon rashers pieces
- 8 cup water
- 2 1/2 tbs chicken stock powder
- 1 tbs olive oil
- 1 pinch salt and pepper
Method

Step 1Heat oil and fry bacon until browned.

Step 2Add water, stock, pumpkin, salt and pepper to saucepan.

Step 3Cook until pumpkin is very soft.

Step 4Blend using a stab mixer or food processor.
Recipe Notes
Omit the oil if using a non-stick pan. Can be served with a dollop of cream. For a variation it is also very nice cooked with some curry powder to taste. Stock cubes and powders say 1 cube or teaspoon per cup of water but I have found it adds more flavour to add a couple more.
