A very delicious chocolate dessert all the family will love.
Ingredients
- 1 cup plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 egg beaten
- 1 white sugar
- 2 tsp lemon juice
- 6 tbs milk
Mousse Icing
- 250 g milk chocolate
- 3 tbs cold water
- 1/4 cup white sugar
- 4 egg yolks
- 1 1/2 cup 30% less fat cooking cream whipped
- 4 egg whites
Method

Step 1Preheat oven to 190c.

Step 2In a bowl combine flour, baking powder and salt. Set aside.

Step 3In a separate bowl beat eggs and gradually add sugar, blending well after each addition. Add lemon juice.

Step 4Heat milk without boiling. Add dry ingredients to beaten eggs in four stages.

Step 5Pour heated milk directly into batter and stir well.

Step 6Pour batter into a round 20 cm unbuttered cake pan. Bake for 25 minutes.

Step 7Remove from oven and let stand to cool on wire rack.

Step 8Turn it out of the pan and slice in 3 layers.

Step 9Mousse icing: Melt chocolate. Add sugar and stir.

Step 10Remove from heat and let stand to cool. Add unbeaten egg yolks and stir well.

Step 11Beat egg whites until stiff peaks form.

Step 12Add whipped cream to chocolate mixture, then fold in egg whites.

Step 13Put the first layer in a 20cm spring pan. Cover this layer with ¼ cup icing.

Step 14Repeat until all three layers are iced. Set aside the remaining icing.

Step 15Put the cake in the freezer, taking it out 10 minutes before serving.

Step 16Remove the sides of the pan and ice around edges.

Step 17Decorate the cake with piping and chocolate curls and sprinkle with a little icing sugar.
Recipe Notes
You can make the chocolate curls with a potato peeler. Decorate the cake after the chocolate icing has set. Use a 20cm cake pan.
