Ingredients

  • 150 g icing sugar
  • 5 egg whites
  • 150 g caster sugar
  • 2 tbs cocoa powder
  • 1 pinch cream of tartar
  • 1/2 cup choc bits
  • 300 ml thickened cream
  • 1 tbs caster sugar

Method

  • Step 1
    Preheat oven to 150C.
  • Step 2
    Sift icing sugar and cocoa together.
  • Step 3
    Beat egg whites and cream of tartar into stiff peaks. Add half the caster sugar and continue beating.
  • Step 4
    When egg whites are firm, beat in remaining sugar.
  • Step 5
    Immediately fold through icing sugar and cocoa mixture.
  • Step 6
    Line a 35 cm x 25 cm baking tray, and gently spoon in mixture.
  • Step 7
    Cook for 20 minutes at 150C then reduce heat to 130C and cook for a further 50 minutes.
  • Step 8
    Once cool, cut into 3 equal strips.
  • Step 9
    Whip cream with extra caster sugar, and fold in choclate bits.
  • Step 10
    Alternate between layers of meringue and cream.
