Completely decadent.
Ingredients
- 150 g icing sugar
- 5 egg whites
- 150 g caster sugar
- 2 tbs cocoa powder
- 1 pinch cream of tartar
- 1/2 cup choc bits
- 300 ml thickened cream
- 1 tbs caster sugar
Method

Step 1Preheat oven to 150C.

Step 2Sift icing sugar and cocoa together.

Step 3Beat egg whites and cream of tartar into stiff peaks. Add half the caster sugar and continue beating.

Step 4When egg whites are firm, beat in remaining sugar.

Step 5Immediately fold through icing sugar and cocoa mixture.

Step 6Line a 35 cm x 25 cm baking tray, and gently spoon in mixture.

Step 7Cook for 20 minutes at 150C then reduce heat to 130C and cook for a further 50 minutes.

Step 8Once cool, cut into 3 equal strips.

Step 9Whip cream with extra caster sugar, and fold in choclate bits.

Step 10Alternate between layers of meringue and cream.
