Just like a magic cake, but with chocolate - and chocoholics will love this! I dare you to stop at one piece!
Ingredients
- 4 eggs room temperature separated
- 1 tbs water
- 500ml milk warmed
- 150g sugar
- 125g butter melted
- 65g plain flour
- 50g cocoa powder
- 1 pinch salt
- 1 tsp vanilla extract
- 1 tsp white vinegar *optional
Method

Step 1Preheat oven to 160C. Grease and flour a 20cm x 20cm baking dish.

Step 2Add the egg yolks to the bowl of a mixer. Add a teaspoon of hot water sugar. Beat on high speed until light and creamy.

Step 3Add melted butter, vanilla extract and salt to mixture and continue beating until butter is fully mixed in and mixture is light and fluffy.

Step 4Sift cocoa and flour together 3 times and add to bowl in batches. After each addition, mix thoroughly.

Step 5Once flour and cocoa is mixed in, gradually add warm milk, a little at a time. Make sure the milk is thoroughly mixed through. The mixture will be very runny.

Step 6In another bowl, add egg whites and white vinegar, and mix until stiff.

Step 7Gently fold the egg whites into the chocolate mixture with a spatula.

Step 8Pour into a baking dish and bake for approximately 60 minutes until cooked. The cake will be wobbly in the middle due to custard.

Step 9Allow to cool completely before serving. Sprinkle either cocoa or icing sugar over the top before serving.
