Ingredients

  • 4 eggs room temperature separated
  • 1 tbs water
  • 500ml milk warmed
  • 150g sugar
  • 125g butter melted
  • 65g plain flour
  • 50g cocoa powder
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 tsp white vinegar *optional

Method

  • Step 1
    Preheat oven to 160C. Grease and flour a 20cm x 20cm baking dish.
  • Step 2
    Add the egg yolks to the bowl of a mixer. Add a teaspoon of hot water sugar. Beat on high speed until light and creamy.
  • Step 3
    Add melted butter, vanilla extract and salt to mixture and continue beating until butter is fully mixed in and mixture is light and fluffy.
  • Step 4
    Sift cocoa and flour together 3 times and add to bowl in batches. After each addition, mix thoroughly.
  • Step 5
    Once flour and cocoa is mixed in, gradually add warm milk, a little at a time. Make sure the milk is thoroughly mixed through. The mixture will be very runny.
  • Step 6
    In another bowl, add egg whites and white vinegar, and mix until stiff.
  • Step 7
    Gently fold the egg whites into the chocolate mixture with a spatula.
  • Step 8
    Pour into a baking dish and bake for approximately 60 minutes until cooked. The cake will be wobbly in the middle due to custard.
  • Step 9
    Allow to cool completely before serving. Sprinkle either cocoa or icing sugar over the top before serving.
